Ella's Signature 30 Minute Fudgy Biscoff Blondies

This small batch blondie recipe yields 6 medium pieces and can be made within 30 minutes.
This recipe yields a buttery fudgy blondie packed with white chocolate and Lotus Biscoff.

Blondies are the white chocolate cousin of the Brownie and are made with White Chocolate over dark chocolate as compared to the standard brownie. You will find many recipes out there that do not use chocolate for their blondies however i wanted to create a recipe that used white chocolate to replace the dark chocolate and the sugar in an original recipe.

Lets talk about Mix ins:
Blondies are super versatile and there are so many different mix ins that can be added to your batter to elevate this treat
  • White Chocolate & Raspberries
  • Strawberry and White Chocolate
  • Cinnamon Sugar
  • Macadamia & White Chocolate
  • Reese's Peanut Butter Cup
  • Oreos
  • Cherry Compote

Recipe:

112 grams White Chocolate
56 grams Butter
1 Egg
35 grams Caster Sugar
1 tsp Vanilla Extract
78 grams AP Flour
1/2 tsp Salt
50 grams White Chocolate
3 Biscoff Biscuits
30 grams Biscoff Spread

Method:

Preheat the oven to 180 degree and line a greased loaf tin with parchment paper.

In a bowl, combine white chocolate with butter and melt it over a double boiler.

In another bowl, add the egg and caster sugar whipping it together till it is light and fluffy.

Add in your cooled melted butter chocolate mix and stir it together.

Fold in your flour and mix till there are no flour pockets

Your blondie batter is ready!

For mix ins we have gone with lotus biscoff biscuits and white chocolate.

Add your batter into a lined baking dish drizzle it with melted Biscoff spread and top it with more lotus biscuits.

Bake in a preheated oven at 180  degrees for 20 minutes

Enjoy!
